How do I change a recipe that asks for unsweetened cocoa when I only have regular cocoa?
I have a recipe I'm using for Red Velvet cupcakes, but I only have regular cocoa, not unsweetened. Should I change the recipe to make for this? If so, how? Would it be ok to use the regular cocoa and not make any changes?

you can use the cocoa just omit some of the sugar required in the recipe.

I think you should be ok by reducing the sugar a little ( approx 1 tblsp per 1/2 cup cocoa) and use twice the amount of the regular cocoa (sweetened cocoa generally has less overall cocoa per volume than unsweetened). Try it and let me know if they are any good.


regular cocoa has alot of sugar added. its probably at least 1/2 sugar and other emulsifiers to help mix with milk. if you use regular cocoa, i would say you double the amount of cocoa your recipe asks for and reduce the sugar. as you mix the batter, taste it after addition of ingredients and if it not as sweet as you like add more sugar. after the cupcakes are baked, taste them and if they are not sweet enough, you can top with a sweet frosting or if the cupcakes are too sweet make your frosting less sweet. good luck. suki
