So I’m reading Good Eats: The Early Years, and I just got to this chapter in the book. Apparently, during this interview, he ran into a cargo door and gashed open his face — hence, the awkward camera angle. I had to come here to watch the episode after reading that.

It’s in Exodus, along with the other basics of kosher practice.


Yeah, Kosher salt just tastes better.


He doesn’t use Kosher salt to Kosher the food, but because it’s easier to pinch than table salt. And in any case the use of Kosher salt isn’t limited to Jews.


Koshering salt is used to cure foods to make them, well kosher. He doesn’t use it for koshering food, he is more interested in koshers salt shape and texture.

Now I see why I always feel good when eating chocolate.


That’s kind of a good thing. Leviticus can possibly be singled out as the single most discriminating part of the bible.

Furthermore, something which is Kosher, is usually only so because it has been prepared in a salt bath, or brine. ;)


Kosher salt is also a larger grain than table salt, and is a “clean” salt. Meaning it typically has no additives like iodine.

Also, something being “Kosher” has nothing to do with it’s religious connotations. Yes, a traditionally practicing Jew is technically only allowed to eat Koshered products, but many chefs like it because Kosher products tend to have higher and safer cleaning standards, especially when it comes to things like preserves and meats.


hes uses it because it tastes better and it is better suited to kitchen use.


it’s interesting that Altononly uses Koser Salt… I read that he is a born again Christian… =]


Salt often does serve a purpose in the recipes. In Art of Darkness II, he explains that it in essence primes our tongues for the chocolate, enhancing its flavor. In Flat is Beautiful (pizza), salt serves to limit yeast growth. In other situations like with potatoes and pasta, salt serves to make the item taste “more like itself.”
