This exceptional milk chocolate couverture is made from cocoa beans which are cultivated in limited quantities and harvested exclusively in one country (Ghana). Forastero and Trinitario cocoa beans are exquisitely merged to produce a distinctively forthright flavour and a touch of acidity. Mildly sweet, very fruity, and with a strongly pronounced cocoa taste, it leaves a characteristic and long-lasting flavour in the mouth, with hazelnut aromas and a note of caramel. It's an ideal product for candy fillings, mousses, fine moulding, coatings, ganaches, garnishes, sorbets, and ice creams. These pistoles are round drops of pure chocolate, easy to melt or temper, weigh, and store, and a divine taste in recipes calling for chunks of chocolate. The pistoles are made using 100% pure cocoa butter and 100% natural vanilla. Pure chocolate requires tempering to obtain a high gloss for chocolate making.
